SPROUT AND VEGETABLE SOUP

The time is approximate and depends on size,amount of vegetables and oven wattage.Always check before the end of cooking time and increase time if needed.Green gram sprouts easily and is faster.I have used  a  micro wave white sauce recipe.


Ingredients
  • Sprouts(green gram)-1 cup
  • Carrots-2
  • Beans -10
  • Cabbage-1/4 cup
  • Green peas-1/4 cup
  • Spinach-a few leaves
  • Garlic-2flakes
  • Celerystock-2 tbsp chopped
  • White sauce-2 cups
  • Salt and pepper-to taste.
Method
  • You can wash Sprouts to remove skin if you like
  • Peel and cut carrots in to cubes
  • Clean and chop beans and spinach.
  • Crush garlic and chop.
  • In a microwave dish put carrots,beans,cabbage,celery,garlic,spinach and sprouts.
  • Sprinkle about two tbsp of water.
  • Microwave on HIGH for 5 minutes.
  • Stir the vegetables once in between.
  • Check if the vegetbles are cooked. If not keep for 2 more minutes.
  • Add 1 tsp salt and white sauce and mix well.
  • Add more water or stock to adjust the consistency.
  • Return the dish to oven and micro HIGH for about 3 mins or till the soup is heated through.
  • Remove from microwave and garnish with grated cheese or celery leaves/salt and pepper.

CREAM OF BROCCOLI SOUP


Broccoli is a highly nutricious vegetable.
One cup of broccoli gives you-2 grams of heart healthy Omega3 fatty acid and is one of the highest vegetable sources of omega-3. You get considerable amount of vitamin C,K,A and Folate.
So everyone should try and make broccoli a part of their regular diet.
Ingredients

  • 2 teaspoons olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 cloves garlic, minced
  • 1 carrot, peeled and chopped
  • 2 cups steamed broccoli
  • 3 cups vegetable or chicken broth
  • 1 cup white sauce 
  • Salt and freshly ground black pepper
Directions
  • In a large pot heat olive oil over medium heat.
  • Add onion, celery, garlic, carrot, and broccoli.
  • Pour broth over vegetables and bring to a boil.
  • Reduce heat to medium and simmer 5 minutes.
  • Using an immersion blender, puree until smooth (you can use a regular blender if uyou dont have one).
  • Add white sauce and  heat through. 
  • Season, to taste, with salt and pepper.
  • Serve garlic bread,toasted.(apply garlic butter on sliced rolls/bread)
