How to make Puri for pani puri


Ingredients
Fine rawa(chiroti)-3/4 cup
Flour(wheat and maida)-1/4 cup
Salt to taste
Method
Mix rawa,flours and salt with enough water to make a dough.Keep it covered for 30 minutes.
Make balls and roll in to a disc.
With a small cutter cut out small discs
Heat oil in a pan to medium and fry the puris.
Use for pani puri or with fillings of your choice

How to make Paneer(cottage cheese)


Ingredients:
Milk-1 litre
Lemon juice or citric acid-2 tsp or as needed
Method:
Pour milk in a pan and bring to a boil.
Take off flame,wait for 3-4 mins.
Add citric acid/lemon juice enough to curdle the milk.Start by using a tsp first,stir well and see how much has curdled.Add more till you get clear whey seperated from solids.

When the whey water(water seperated from milk) is clear strain with a cloth or sieve.
You can crumble the paneer at this stage and use as pizza topping,sandwich spread or in salads.(I will post some recipes later)
Put some weight on top of the paneer and leave for 10-15 mins.
I have put a stone(i use it to crush garlic) in to put more weight.





Slice or cut in to cubes and use in recipes.

You can use sour curds also for curdling,but use the paneer made with curds only for curries and not for making sweets
Use whey water in soups or to mix wheat flour for rotis

Microwave White Sauce








Ingredients:
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • salt and pepper to taste
Directions:
  • Put the butter in a microwave safe bowl
  • Melt on High for 15 to 30 seconds.
  • Stir in the flour until blended and micro High 30 seconds or till bubbly.
  • Stir in the milk, salt and pepper.
  • Microwave on high for about 2 minutes.
  •  Stir and microwave on high for 1 to 2 minutes more or until thickened.

HOW TO PREHEAT OVEN

Preheat oven:
Before you bake something, your oven needs to be heated to the proper temperature(say 350,375 or 400 F mentioned in the receipe).
It can take several minutes for your oven to reach the right temperature.
This is why it’s often best to start the oven during the beginning or middle of your preperation, instead of waiting until the end. Then your oven will have the required temperature and ready .
Normally it reaches the temperature in 10-15 minutes.
