BOTTLE GOURD HALWA

Ingredients
Grated bottle gourd -2cups
Milk -2cups
Cardamom powder-1/2tsp
Sugar-1/2 cup
Ghee -2tbsp
 For the garnish
 Slivered almonds and raisins
 Method
 Heat the ghee in a pan, add the grated bottle gourd and saute till it turns transparent and soft
Add the milk and bring to a boil.
 Simmer the mixture, stirring occasionally.
 When the halwa is almost dry, add the sugar and cardomom powder and mix well.
 Stir till  all the moisture has evaporated.
 Serve garnished with the slivered almonds and raisins fried in a tsp of ghee

carrot halwa



Ingredients
Carrots,grated-2 cups
Milk-4 cups
Sugar-4-6 tbsp
Elaichi powder-1/2 tsp
Almonds slivers-3 tbsp
Method
Cook milk and grated carrots till soft and milk is reduced to about a cup.

Add sugar and a pinch of salt,cook till dry.

Add cardomom powder (see how to powder cardomom here) and mixwell
Serve garnished with slivered almonds.

Beetroot juice

Ingredients
Beetroot-1
Lemon-1
Sugar or honey-2 tbsp
Salt- a pinch

Method
Peel and chop beetroot
Put in a blender and grind to a fine consistancy.
Filter with a sieve,add sugar or honey and salt
Serve chilled.

Cabbage Vegetable

I have used greengram dal with cabbage.Dal adds to the nutritive value and gives taste to the otherwise bland vegetable.It can be used with rice/rotis.

Ingredients:
Cabbage chopped-2 cups
Greengram dal-2-3 tbsp
Green chillies-2
Turmeric powder-1/2 tsp
Mustard seeds-1 tsp
Urad dal-1 tsp(optional)
Coconut -2tbsp
Oil-1 tbsp
Salt to taste.

Method:
Boil 1 cup water and add greengram dal,cook till it is half cooked.
Add cabbage to it with salt and turmeric powder.
Cook till cabbage is soft and water is absorbed

Heat one tbsp oil in apan add mustard seeds and when it splutters add urad dal brown it.

Add curry leaves,green chillies and coconut mix well.
Add it to the cabbage mix well and serve.

Dal and vegetable rice


This is a time saving main dish you can make easily with all nutirents.
Ingredients:
Rice- 3/4 cup
Toovar dal-1/4 cup
Onion- 2
Tomato-2
Green peas,chopped carrot and potato,drumstick-1 cup(you can use any vegetable)
Red chillies-2
Mustard-1 tsp
Channa dal-1 tsp
Turmeric powder-1/2 tsp
Oil-1 tbsp
Salt to taste.
Curry and coariander leaves-for garnishing
Method
Chop onion and tomatoes.
Wash rice and dal.
In a pan heat 1 tbsp oil ,add mustard seeds and chillies.
Add channa dal and saute till brown.
Add onion saute till glassy,add tomatoes fry till wilted.
Add all the cut vegetables and washed rice and dal mixture.
Add 2 to 2&1/2 cups water,salt and pressure cook till done.
Garnish with curry leaves and coariander,
Serve with onion raita,pickle or chips.

rawa khichdi slide show

RAWA KICHDI

 


Ingredients
White rawa(cream of wheat)-1cup
Onion-2
Tomato-2
Carrot-2
Peas-1/4 cup
Beans-10
Bay leaf-2
Caraway seeds-1 tsp
Clove-2
Cardomom-2
Green chilli-1
Crushed garlic flakes-3
Salt to taste.
Oil -6 tbsp
Method  
  •  Peel and chop onion and carrots.
  • Chop beans and tomatoes
  • Heat 1 tbsp oil in a pan and add bay leaves,cloves,caraway seeds and cardomom.
  • Add 3 flakes of crushed garlic.
  • Stir add onion and green chillies,
  • Saute till onion is tranparent,add peas chpped beans and carrots.
  • After a few minutes add tomatoes and salt.
  • When the tomatoes become soft add 2 cups water and bring to boil.
  • Lower the  flame,add rawa ,mix well and cover .
  • Cook for a few minutes, add remaining oil and stir in between
  • Garnish with chopped coariander leaves and serve with chutney of your choice.

CHOWCHOW VEGETABLE(CHAYOTE SQUASH)




An indian receipe using chayote squash.
Chayote squash vegetable(subzi)
Ingredients:

  • 2 chayote squash(chow chow), peeled and diced

  • 1 onion
  • 3-4 cloves of garlic, finely chopped
  • 1/2 tsp turmeric powder
  • salt to taste
Roast and powder coarsely:
  • 2 tbsp white sesame seeds
  •  3-4 red chilies

  Seasoning:
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal
  • few curry leaves
  • few sprigs green coarinder(cilandro)
  • 1 tbsp grated coconut.
Directions:
  • Cook diced squash,turmeric powder and salt.
  • Heat oil.
  • Add the mustard seeds, when it pops add onions, and saute till translucent.
  • Add the cooked squash.
  • Mix well,sprinkle sesame powder,coconut,curry leaves and coariander.

AVIAL

Avial - Mixed Veggies in curd gravy( Kerala Style)



Ingredients:
  • 1 cup yam peeled and diced
  • 1 cup ash gourd peeled and diced
  • 1 raw banana peeled and diced
  • 2 Drumsticks - cut in 3" lengths
  • 2 potato peeled and diced
  • 2 brinjals,diced
  • 1/4 cup beans cut in 2"lengths
  • 1 carrot,peeled and sliced
  • 1 cup yogurt whisked smooth
  • SaltTo taste
Grind the following with 1/4 cup of water
  • Shredded coconut 1/4 cup
  • 2 Green chillies.
  • 1 tsp. Cummin seeds
For tempering:
  • Curry leaves Few
  • 2 tbsp Coconut oil
  • 1 tbsp. mustard seeds
METHOD:
  • Mix the curd to the ground paste and keep aside.
  • Steam all the vegetables with very little water till soft.
  • Mix all the cooked vegetables together with salt.
  • Add the paste and heat through on low, taking care to prevent the yogurt from curdling.
  • Heat coconut oil. Add mustard seeds till they splutter, then add asafetida and curry leaves and mix well.
  • Pour over the dish and mix well.
  • Serve hot with rice and sambar.

VEGETABLE AND CHEESE OMLETE

Vegetable omlete
Enjoy fresh vegetables in this delicious omlete!
Ingredients
  • 6 eggs
  • 3 tablespoons milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons Oil
  • 1/4 cup chopped green pepper (capsicum)
  • 1/2 cup grated carrot
  • 1/4 cup chopped onion
  • 1/4 cup grated cheese
Method:
  • Whisk together eggs, milk, salt and pepper in medium bowl.
  • Heat oil in a pan. Add green pepper. Cook and stir over medium heat until tender. Stir in carrot and green onion.
  • In a pan pour egg mixture cook 2-3 minutes till cooked on one side.
  • Spread vegetable mixture and sprinkle cheese on top.
  • Grill in oven till cheese melts.Cut in to wedges and serve immediately.
