Idli upma(scramble)


Ingredients
idli-4
onion-1
green chillies-2
mustard seeds-1/4 tsp
urad & bengalgram dal-1 tsp
turmeric powder-1/8 tsp
curry leaves-few
coconut and/or carrots grated-2 tbsp
oil 1 tbsp
Method
Sprinkle 1tbsp of water on ilis and crumble
Chop onion and green chillies
Heat oil in a pan add mustard seeds and when it splutters add dals.
Saute till the dals are golden,add chopped onion and green chillies.

Fry till the onion is transparent
Add crumbled idlis and turmeric powder.
Saute till everything is combined well and heated through.
Garnish with coconut and carrots

RAW BANANA BAJJI

RAW BANANA BAJJI
Ingredientts:
  • 1 cup bengalgram flour(besan)
  • 2 tbsp rice flour
  • a pinch soda-bi-carb
  • few drops lemon juice
  • 1 tsp chilli powder
  • 1/2 tsp turmeric powder
  • salt to taste
  • 1 raw banana
  • oil for deep frying




Method:
  • In a bowl mix besan,rice flour,chilli and turmeric powder,soda-bi-carb and salt.
  • Add enough water to make into a thick batter.
  • Add lemon juice.
  • Peel banana and cut into 2"long thin slices.
  • Dip banana slices in the batter and deep fry in medium heat till golden brown.
  • Serve with tomato ketchup.
    Tip:
  • After frying 2-3 batches you will have less oil and less batter.
  • Well,chop banana slices into thin stripes mix with batter.
  • Drop by spoonful into oil.
  • Adding lemon juices enhances action of soda-bi-carb

PAU BHAJI

Nutritious Pau Bhaji (Serves 4)
6 buns or pau
25 gm butter
Bhaji
1 cup cabbage (very finely chopped)
1 cup carrot (very finely chopped)
1 cup beans (very finely chopped)
1 cup potato (boiled and mashed)
2 onions (finely chopped)
2 cups tomatoes (finely chopped)
1 ½ tsp ginger-garlic paste
2 tsp pau bhaji masala
3 tbsp butter
1 tsp salt, or to taste
Method
Cook the cabbage, carrots and beans in a pressure cooker with ½ cup water and ½ tsp salt for 2-3 minutes after the first whistle.
Heat 2 tbsp butter in a kadhai, add the onion, keep frying on mediun flame.
Add ginger-garlic paste.
When the onion turns brown, add the tomatoes and ½ tsp salt and fry well till the tomatoes are very soft.
Add the pau bhaji masala and mix thoroughly.
Add the mashed potatoes and mix well.
Add all the boiled vegetables along with their water, if any. Mix thoroughly and fry till it is of required consistency.
Cut each in half bun. Slightly roast the buns on butter.
Serve hot with the bhaji.

MASALA PEANUTS

A very healthy snack.Uses minimum oil and made easily.
Masala peanuts
Ingredients:
1/2 cup peanuts
1/2 cup gram flour(besan)
2tsp chilli powder
1tblsp oil
salt to taste
Method:
Mix all ingredients together in a bowl ensureing every peanut is coated with the masala.
Spread evenly in a micro proof glass plate.
Microwave High for1and1/2 minutes.
Remove.cool and store in airtight container.
